Ok, once again, the continuous mantra: "I just don't have time to cook. I don't want to dirty up my dishes. Today I'm going to show you how to do baked cod.
1 package cod (fresh or frozen)
Green or Red Pepper
Herbs de Provence
Lay out a square of parchment paper. Chop up strips of leeks, celery, red/green pepper to place in a row on the paper. Season vegetables with black pepper and Herbs de Provence. Season cod with Herbs de Provence as well and then lay the fillets on top of the vegetable strips. Fold paper over the vegetables/fish and crimp the edges all the way around forming a pouch. Place on baking sheet and cook for 15 minutes.
