Baked Swai Fillet

Today I'm going to introduce you to a new variety of fish that's showing up in the grocery stores and on restaurant menus. The name of the fish is Swai.

Ingredients:

3 swai fillets
Panko bread crumbs
Corn meal
All-purpose seasoning
1 lemon

Thaw out the swai fillets and pat dry. Pour panko bread crumbs into bowl, add sprinkling of corn meal, and add all-purpose seasoning to taste (or season as you like).

Spray fish fillets with some Pam cooking spray. Cover fillets with bread crumb mixture.

Cook in 350 degree oven for 12-14 minutes. Do not overcook or fish will be dry. Garnish with lemon zest.
