Fish Tacos

I just got back from California and the first thing I do when I get off the plane is I gotta find a fish taco stand. And then it donned on me, you don't see fish tacos around here and I think of all the people that fish and the perch and the walleye and the trout. So today I'm going to show you how to make fish tacos and if you're a fisherman you're always looking for ways to get rid of fish. These things rock.

Ingredients:

Tilapia fillets
Oil
Salt and Pepper
1 lime
Mayo
Fresh Cilantro
Tortillas
Shredded cabbage
Chopped onion
Chopped Red pepper
Chopped Mango
Chopped Avocado

Lightly oil grill. Season tilapia with salt and pepper and grill until cooked through.

Add juice of 1/2 of lime to 1 cup of mayo in bowl. Chop up cilantro and fold into mayo mixture. Add zest of lime.

Warm tortillas. Top with cabbage, onion, tilapia, red pepper, mango, avocado. Drizzle lime cilantro mayonnaise over top of taco.
