Pork Carnitas

Today I'm going to show you how to do a Pork Carnitas, which is a Mexican BBQ pork, in 30 minutes. What's great about this is it uses some of the cheapest cuts of pork that you can buy.


Ingredients:

5 lb pork shoulder roast

For meat dredge:
Olive oil
Cumin
Red pepper
Garlic
Salt and Pepper

Additional Ingredients:
1 small onion
4 cloves garlic
Mexican oregono
Dried cilantro
Ancho chili and chipotle sauce
Fresh squeezed orange juice
Chicken broth
Cinnamon stick
1 lime
Corn tortillas

Chop 5 lb pork shoulder roast into cubes to help it cook quicker. Then dredge in a mixture of olive oil, cumin, red pepper, garlic, salt and pepper. Toss the pork and coat with oil and seasoning. Brown meat in pressure cooker.

Add chopped onion, garlic, oregano, cilantro, cinnamon stick, orange juice, lime juice and chili and chipotle sauce to pressure cooker. Cook for 25 minutes.

Add pork to tortillas and top with favorite condiments.
