This is the winner of the weird recipe name, but it's one of those things that I just gotta try it. It's called Kansas Crab Grass. Who comes up with these ideas?

Ingredients:

1 Tbsp butter
1 medium onion, finely diced
1 lb fresh spinach
7 oz can crabmeat, drained
1/2 cup parmesan
Lime zest
Pinch of nutmeg
Salt/Pepper

Sautee onion into butter until onion is transparent and softened. Add fresh spinach and allow to cook down. Add crabmeat and 1/2 cup freshly grated Parmesan cheese. Add lime zest, pinch of nutmeg and salt and pepper to taste.

Transfer mixture to baking dish and warm in oven for about 20 minutes until cheese is melted. Serve with crackers.
